As for farms...best bet would be to contact them directly and see if they have any internships. Most of our cheesemakers here in the states have websites.  They would most likely post on there.

		<description>Boy, I miss Zingerman&#039;s sometimes.  They introduced me to so many fine things in life - great olive oil, real bread, real meat, real balsamico, and real cheese.  I hadn&#039;t realized that so much taste and variety existed before I walked through those doors.  They did a great job of making it all not pretentious too - always ready to inform, and offer tastes.</description>
